Why does spinach make my mouth all powdery after I eat it?

The turnip greens were supposed to be my lunch, but I forgot them. So they were left all day on the kitchen counter. I half heartedly picked on them all night, but threw most of them away in the end, which is really sad because they were SO good when I first cooked them.
